borra opens at six, and the first hour belongs to people coming off night shifts. Tiled floor, one ceiling fan, eight tables. Nobody here is going to ask you to leave.

Two levers, forty years between them
The three-group has been bolted to this bar since 1998 and still holds 93 °C without complaining. The two-group beside it handles decaf and everything for the kids. Both get stripped and rebuilt every January, which is the only week we close.

Marisol starts your coffee before you order it
She reads the door. Regulars get a nod and a cup. New faces get thirty seconds of questions — how you drink it, how much time you have. Either way the grinder is already running by the time you reach the till.

Eighteen hours, one drop at a time
The tower runs overnight at roughly a drop a second. Cold water never scalds the grounds, so what lands in the carafe tastes like the fruit the seed came out of: cherry first, then cane sugar, then a little tobacco right at the end.

The light turns gold around six and nobody moves
Late afternoon the sun comes through the west windows and lands flat on the floor tiles. The room empties for an hour, then fills back up with people who have finished work and have nowhere they need to be.
